Afghani chicken shawarma

Chicken 1 Kg thighs and legs 
Salt to taste 
Kasuri methi/fenugreek leaves 1 tsp
Garam masala 1 tsp
Ginger garlic paste 2 tsp
Bhuna zeera crushed 1 tsp
Mint leaves handfull, coriander leaves handfull 3 green chillies blend them and make a paste 
Lemon juice 1/2 
Fresh cream 1/2 cup
Oil 1 tsp 

Apply this marination paste to chicken. Smoke it before frying it. Rest it about 2 hours in refrigerator. In a pan heat 2 tbsp oil and put chicken pieces on a high flame cover it with lid and let it cook for around 30 mins 15 mins each on one side. After its done take a fork remove all the flesh.


For dough of pita bread or tortilla : 1/2 cup milk lukewarm 
1 tsp yeast 
1 tsp sugar 
Let the yeast bloom for 8 mins
2 cups maida and 1 tsp salt knead a dough and rest it untill about 2 hours or untill it rises. Make 8 portions of dough and roll it thin. Heat pan and roast it. 

Red sauce : 5 whole red chillies boil them in water for about 5 min. Rest them about 1 hour then in a blender add 3 garlic peeled, whole red chillies which were soaked, 1 tsp salt, 2 tsp tomato ketchup, crushed zeera 1/2 tsp, 1/2 lemon juice and same water in which chillies were soaked. Make a paste sauce is ready.

Assembling : pita bread, mayonnaise, red sauce, cooked chicken , jalapeño, french fries roll it shawarma is ready enjoy with ketchup or the same mayonnaise and red sauce dip.
