Mutton Tikka Biryani
Ingredients to marinate mutton : 600 gms mutton, apply raw papaya paste and marinate for 1 hour.
1 tbsp gingergarlic paste
1 tbsp kashmiri red chilli powder
Salt to taste
2 tsp tandoori masala
2 tbsp vinegar/lemon juice
1 tsp coriander powder
1 & 1/2 tsp chaat masala
Red food color ( optional )
(I marinated it with 1 tsp ajinomoto its totally optional)
Marinate mutton for 1 hour and deep fry it untill it turns out nice and golden in color (*dont over fry or it will turn out hard) smoke it with lighten up charcoal.
Soak 2 & 1/2 or 3 cups of basmati rice for 1 hour. Boil rice with 6 cups of water and 2 tsps salt in it.
Masala for biryani : 3 mid onion fried (*birista)
3 tbsp coriander leaves chopped
2 tbsp mint leaves chopped
3 green chillies (*slit if you wish for spicy)
2 tsp cardamom powder
3 tsp zeera
1 & 1/2 tsp garam masala powder
250 gms curd
1/2 tsp turmeric powder
1 tbsp gingergarlic paste
2 tsp kashmiri red chilli powder
Mix everything well.
Method : Heat 2 tbsp oil , 1 star anise , 1/2 inch mace , 6 cloves , 2 green cardamom , 3 inch cinnamon stick, add in the curd mixture cook it well. Add in the mutton tikka.
In another pot layer cooked rice first and then add mutton then another layer of rice. birista on top, green food color, yellow food color, mint leaves and coriander leaves put it on dum for 20 to 25 mins. And serve.
The most awesome biryani. i must say that you should give it a try.
